Mushroom Soup

Ingredients

  • Mixed mushrooms 300 g

  • Vegetable stock 125 ml

  • Coconut milk 125 ml

  • Onion 1 small or half large 

  • Garlic 2 cloves

  • Fresh thyme, just the leaves 1 tbsp

  • Lemon juice 1 tbsp 

  • Lemon zest 0.5 tsp

  • Salt 1 tsp

  • Olive oil 1 tbsp

Today we are sharing this delicious creamy mushroom soup with you, which is perfect to start your Christmas dinner off with. This recipe can easily be scaled up if you will be more, but this serves about 3-4 people as a starter. This soup will go perfectly with some toasted bread and some olive oil. This recipe is easy, fast, and will guarantee a tasty experience and Christmas spirit. 

Step by step

  1. Roughly chop the onion, mushrooms, and garlic. 

  2. In a large pot, fry the onion on medium heat with olive oil until softened, about 3-4 minutes. 

  3. Add the garlic and mushrooms and fry for about 5 minutes until the mushrooms have softened.

  4. Add in the salt, lemon juice, and thyme, fry this for a minute.

  5. Add the coconut milk & stock, and let this simmer for 10 minutes.

  6. Using a stick blender or food processor, and blend until creamy, add coconut milk and/or stock to get the desired consistency.

  7. Serve with some of the fried mushrooms on top and a piece of toasted bread on the side.
